About Me

resistantnikki
When I was first diagnosed with insulin resistance, I felt many things. Peeved. Nettled. Irate. Afraid. Those are all words that come to mind. And then of course there was the intense longing for the cake, doughnuts, and bread I was passing up... After a while, I made the decision to resist Insulin Resistance. It would not claim my health or my happiness. I would resist fear by learning all I could about IR. I would resist feeling doomed to future health problems by doing all I could to be healthy and balanced. I would resist feeling as though I was missing out because of dietary restrictions by learning to cook and bake all over again. I would make my pots and pans, my spice rack, and yes - even my chocolate - into my weapons of resistance.
